CARDOON AND DRIED TOMATOE PATÉ
Used for Tuscan crostini, but also to season meats and main courses. It is produced with patience and wisdom. The tomatoes are dried directly in the sun. Once dried, we whip them together with cardoons cooked in water and vinegar, pine nuts, almonds, extra virgin olive oil, aromatic herbs and a pinch of chili pepper. It is a very balanced flavor, suitable for many uses and for all ages. Improvise a fancy spaghetti dish with the paté by adding cherry tomatoes, oil, and parsley.
