This pesto is produced in the spring with the young sprouts of five aromatic plants (parsley, mint, marjoram, oregano, thyme), blended smooth with extra virgin olive oil and almonds. This is a seasonal product that is only prepared during two or three weeks of the year, before the young herbs mature and their fresh flavors become woody.
